An arch is normally formed to support something above. It acts the same as a lintel. An arch to the side of a chimney breast may be diverting the flu over to the chimney stack. If you look in the loft you may see if this is the case. My advice would be call in a professional builder or a structural engineer to advise you before you start knocking brickwork out.

An arch is structural part of a building why would you want to remove it ?
it sounds like it is supporting the chimney in the attic, the chimney flue brickwork corble/bend is usually in the attic area
